As you can see I’m still on my grain-free kick. Except I had rice today because you just can’t very well eat Indian food without rice.

So when I came home from work all exhausted and cranky, I made wraps. Naturally.

Really though, they ain’t tortillas. They ain’t pita bread. They ain’t pancakes.

They refuse to be defined.

I have created these monsters for the sole purpose of acting as a tortilla for my enchilada recipe BUT their potential is limitless. They can and will be whatever you want them to be.

They are what they are. Grain-free thingies for everything!

And they are easy to make. And you can fry them in lard. Easy + Lard = Happiness.

Here’s what you will need:

Makes about 8 wraps

4 eggs

2/3 cup of whole, raw milk. Or whatever you want, really. Coconut milk is fine if you’re into that sort of thing.

3 T coconut flour

Here we go:

Blob some lard into the pan. Heat on medium.

Add eggs, milk and coconut flour to a bowl (I used my handy-dandy pyrex because it pours things nicely into the skillet).

Whisk until smooth.

Pour into the hot pan until about 5 in. in diameter.

Fry until browned on each side. This doesn’t take very long so be careful!

You can make them larger if you want to repurpose them for sandwich wraps . I would double the recipe in that case.

There you have it. Grain-free tortilla wrap thingies.
